Additionally, cauliflower has extremely beneficial nutritional content:  it has 77% of the recommended daily value of vitamin C and is a good source of vitamin K, folate, pantothenic acid, vitamin B6, potassium and protein.  It is also a very good source of choline, dietary fiber, omega-3 fatty acids, manganese, phosphorus, and biotin.

Cauliflower reaches superfood status in that its nutritional potency may ward off heart disease and its sulfur containing compounds, called glucosinolates, may lower your risk of cancer.
